How Spincakes are Made

The original tree cake
Spincakes are a type of cake called 'baumkuchen', which literally translates to 'tree cake' in German. Etymology of the term 'baumkuchen' is disputed, but popular interpretation assumes it's descriptive of the rings that are formed in cake as in rings in a tree trunk.
How spincakes are made
We use a custom oak rod threaded onto a stainless steel shaft which connects to a rotisserie motor. We preheat the oven with the rod already rotating to evenly distribute the heat. Once the oven reaches 400ºF, the first layer of batter is gently coaxed onto the rod. Each layer takes between two to three minutes to fully bake, and another layer is applied. This is repeated until the desired number of layers is achieved.
It's a labor intensive process that takes an hour or more per cake.
